Cooking Instructions - June 2006 Menu

Note: If you're looking for May 2006  items, these appeared in the April and June Menu offerings.  If you can't find what you're looking for on this page, please click here for April's cooking instructions.

When thawing freezer bags be sure to place them in a bowl or baking dish in the fridge in case of leakage. If you forget to thaw you can thaw in the microwave, or increase the cooking time by about 25 minutes for the foil pans.

Catalan Chicken - Pour contents of ziplock with chicken into saucepan. Cover and cook for 20 minutes. Turn chicken and cook, covered until juices run clear when chicken is poked. Add peas and cook just until peas are warmed through.
Garnish with sliced almonds.

Cactus Salsa with Pork with carrots and Rice - Pour contents of bag containing pork into an oven proof dish and bake at 325 until tender. Heat rice in microwave and serve pork over rice.

B & B Sirloin Steak – Remove steak from bag
and reserve marinade. Grill or pan fry approx 4 minutes per side or desired doneness. Pour marinade into small sauce pan and reduce to a thick glaze and pour glaze over steak and side dish.
Garlic Tarragon – Place each piece of chicken on a piece of foil tightly seal foil  cook approx: 40 minutes. Remove from foil and continue to grill until juices run clear when pierced. Oven: bake at 375 for approx 50 min or until juices run clear.

Burritos Stuffed with Beans, Corn and Olives – Place thawed burritos, rolled edge down, in oiled baking pan. Spray with vegetable oil spray such as Pam, top with a sheet of  parchment paper and cover pan tightly with foil. Bake for 20-25 minutes, until heated through. Uncover the pan, remove parchment paper and if desired, sprinkle the burritos with  grated cheddar cheese and bake 5 minutes more or until cheese is melted. Serve immediately. Serve with salsa, sour cream and chopped tomatoes.

Pork Skewers (Souvlaki) – Prepare BBQ grill. Drain meat and reserve marinade. Slide meat cubes onto skewers. Place on grill and cook for about 20 minutes total, basting with reserved marinade. Slide off skewers and place in pita you can add a yoghurt based sauce if you like or even mustard.

Egg and Hash Brown Pie – Pour contents of bag in a oven proof baking dish. Bake in the preheated oven 25 to 35 minutes, or until a knife inserted in the center comes out clean.. Remove from oven, and let sit 5 minutes before serving. 

Pork loin Chops with Tomato Feta - Remove pork from bag place in skillet. Cook approx: 6-8 minutes turn half way through add tomato mixture to pan and heat through. Serve hot and sprinkle with feta. Serve with garlic mashed potatoes and asparagus. It's great!

Maple Curry Chicken Pasta - Slowly heat contents of ziplock on the stove top add chicken stock, milk or cream to thin. This is pretty filling a side of steamed broccoli goes great with this. I have eaten this cold and it is just as good.

Beef , Pepper & Red Onion Kabob  - Prepare BBQ grill. Drain meat and reserve marinade. Slide meat cubes onto skewers. Place on grill and cook for about 20 minutes total, basting with reserved marinade. Grilled potatoes would go great with this summer sensation.

Chicken, Fennel and Mushroom Soup  - Heat slowly on stove top. Do not boil. A slice of crusty bread or a dinner roll goes good with this.

Hot Mustard Grilled Salmon  - Thaw in refrigerator over night.
Grill:  Preheat grill. Remove salmon steaks from marinade. Over low to medium heat, grill steaks for 10 minutes on one side, brushing once or twice with marinade. Flip and grill for 5 – 7 minutes or until meat flakes easily with a fork. Oven: Preheat oven to 450°. Place steaks in single layer in greased pan. Drizzle with marinade and bake for 10 minutes or until meat flakes easily with a fork. Serve with rice and snap peas
 

SIDES - Thaw all sides except for Sweet Potato Fries in fridge. Serve pastas hot or cold add some cheese and you have another meal. Thaw coleslaw in fridge. Heat rice in micro wave to desired temperature. Rice can be heated from frozen in microwave.

Sweet Potato Fries - Preheat oven to 400 place frozen fries on a baking sheet covered with parchment paper and bake for approx 10 minutes turn and continue for another 10 minutes or until desired crispness is achieved.
