Cooking Instructions - August 2006 Menu
Jalapeno Cheddar Chicken Calzones – Thaw in fridge overnight or increase the cooking time by approx: 10 minutes. Bake in a 350 degree oven for 13 to 15 minutes until golden brown. Serve with a tossed salad.
Bistro beef with sun-dried tomatoes – Thaw in fridge overnight. Pour mixture into a pot and bring mixture to a boil. Reduce heat to medium-low. Cover and simmer, stirring occasionally, until beef is tender, about 1-1/2 hours. Great with mashed potatoes and green beans. Mixture will keep well, covered and refrigerated, up to 3 days or freeze up to 3 months. To serve, defrost and reheat in a microwave. Or place in a saucepan with a little water and stir often over medium-low heat until hot.
Indian Summer Casserole - Thaw in fridge overnight. Bake at 375 for 30 minutes. Serve with a crusty roll.
Spanish Chicken with Chorizo - Thaw in fridge overnight. Pour ingredients into sauce pan and simmer 35 to 40 minutes add chorizo and olives for an additional 5 minutes until heated through. Serve over rice.
Chipotle Lime Pork Loins – Thaw in fridge overnight.
Remove chops from marinade (discarding marinade) and grill over medium-hot coals for a total of 12-15 minutes, turning to brown evenly. Serve chops immediately. Serve with tortillas and beans with rice.
Black Pepper Chops with Molasses Butter- Thaw in fridge overnight
Remove Peppered chops from bag and grill chops over a medium-hot fire for 12-15 minutes, turning once. Top each chop with a tablespoon of molasses butter. Serve with roasted potatoes and vegetables.
Orange Salsa Salmon - Thaw in fridge overnight
Remove Salmon from bag bake at 450º F. or grill, allowing about 10 minutes cooking time per inch of thickness measured at its thickest part, until salmon is cooked through and flakes when tested with a fork.
Pour salsa mixture into a small saucepan and bring to a boil, remove from heat. Serve with potatoes and peas toss cooked potatoes and peas gently to coat in 2/3 of the salsa. Arrange salmon on individual plates and spoon remaining sauce on top of each. Serve hot or chilled.
Roasted Chicken with Plum Tomatoes, Green Peppers and Olives - Thaw in fridge overnight.
Preheat oven to 425°. Spray roasting pan with cooking spray.
Pour chicken and sauce into pan. Bake uncovered for 30 minutes, basting occasionally. Reduce heat to 375° and cook for a further 20 minutes or until chicken juices run clear.
Daoud Pasha – Spicy lamb meatballs with pine nuts in tomato sauce - Thaw in fridge overnight. Pour contents of ziplock into skillet. Can still be frozen. Simmer thawed sauce and meatballs 20 minutes, frozen 30 minutes.
Serve over rice or noodles.
Sizzlin Steak with Spiced Balsamic and Mustard – Thaw in Fridge overnight. Remove Steaks from bag Grill or broil over high heat 5 to 7 minutes per side or to desired degree of doneness. Serve with corn on the cob.
Summer Pasta Alfredo – Slowly heat contents of ziplock on the stove top add chicken stock, milk or cream to thin. This is pretty filling a side of steamed broccoli goes great with this. I have eaten this cold and it is just as good.
Salmon Laksa – Thaw in fridge overnight. Boil a kettle of water place the noodles in a large bowl, cover with the boiling water and set aside.
Heat the oil in a large wok, throw soup mixture and bring to the boil, reduce the heat and simmer very gently for 5 minutes. Add the salmon, mixture and simmer for another 2-3 minutes until the greens are tender, but still crunchy.
Drain the noodles and divide in bowls. Ladle over the soup, then float a chili ring or two in each bowl. Serve immediately.
SIDES
Thaw all sides except for Sweet Potato Fries in fridge.
Serve pastas hot or cold add some cheese and you have another meal. Thaw coleslaw in fridge.
Heat rice in micro wave to desired temperature. Rice can be heated from frozen in microwave.
Sweet Potato Fries:
Preheat oven to 400 place frozen fries on a baking sheet covered with parchment paper and bake for approx 10 minutes turn and continue for another 10 minutes or until desired crispness is achieved. |
