Cooking Instructions - September 2006 Menu

COOKING INSTRUCTIONS

When thawing freezer bags be sure to place them in a bowl or baking dish in the fridge in case of leakage. If you forget to thaw you can thaw in the microwave or increase the cooking time by about 25minutes for the foil pans.

Calzones – Thaw in fridge overnight or increase the cooking time by approx: 10 minutes. Bake in a 350 degree oven for 13 to 15 minutes until golden brown. Serve with a tossed salad. Double the time if cooking from frozen. Serve with a salad of your choice.

Carne Guisda - Thaw in fridge overnight. Pour mixture into a pot and bring mixture to a boil. Reduce heat to low, cover and simmer for 30 minutes to 1 hour, or until meat is tender. (Note: If mixture is too thick, add water as needed. Or if mixture is too thin, combine some cornstarch and water and add to thicken.) Serve with mashed potatoes or flour tortillas.

Egg and Cheese Puffs - Thaw in fridge overnight. Preheat oven to 350 degrees F (175 degrees C). Remove cheese mixture from refrigerator and spoon batter into lightly greased muffin cups. Bake in preheated oven for 25 to 30 minutes, until puffs are slightly golden on top. Serve with your favorite salsa topping.

Chicken Adobo - Thaw in fridge overnight. Place chicken with marinade in non aluminum pot. Cook approximately 30 minutes. Transfer chicken to a bowl and reduce marinade to about 3/4 cup. Pour over chicken. Eat at once or chill. It is better after a day or two. If necessary, add a bit of water when reheating. Serve over fancy rice.

Basil Peanut butter Pork – Thaw in fridge overnight.
In a medium saucepan pour bag containing pork cook for about 4 minutes then turn chops and cook for another 3 minutes. Remove chops from pan to a serving platter. Discard bay leaf. Stir in milk mixture. Cook, uncovered, over medium-high heat for 5 minutes, stirring occasionally until sauce thickens slightly. Spoon the sauce over chops
 
Pork Loin Chops with Juniper Butter - Thaw in fridge overnight. Pan Fry the pork loin chops for 4 minutes on one side and about 3 minutes on the other. Serve with buttered carrots and hash browed potatoes.


Coconut – Basil Barbeque Salmon – Thaw in fridge overnight. Lightly oil grill. Heat barbecue to medium-high. Place salmon on grill. Reserve remaining marinade. Grill salmon with lid closed until a knife tip inserted in centre of fish comes out warm, 8 to 10 minutes. Turn halfway through. Meanwhile, pour reserved marinade into a large frying pan set over medium-high heat. Bring to a boil. Stir often, uncovered, until thickened, 7 to 8 minutes. Meanwhile, pour a little sauce in centre of each dinner plate. Place salmon in centre and spoon remaining sauce overtop. Sprinkle each serving of salmon with more green onions if you like. Serve sauce over ice or vermicelli.

Roasted Chicken with Fennel - Thaw in fridge overnight
Cover and bake at 450 degrees for 30 minutes. Uncover, turn chicken and cook at 350 degrees for 30 minutes more. Serve Roast sliced potatoes and vegetables.

Cocoa-Coffee Spiced Chicken with Salsa Mole - Thaw in fridge overnight. Heat oven to 425 F. Grease baking sheet. Bake 20 to 25 minutes or until juices are clear. Serve with beans, rice and salsa mole.

Asian Fire Beef – Thaw in Fridge overnight. Cook in a preheated oiled wok or frying pan just until meat is cooked thru a few minutes. Remove from heat and serve with rice or noodles.

Mac & CheeseTo prepare: place frozen casserole (covered with aluminum foil) in preheated 375°F oven. Bake for 25 minutes; remove aluminum foil. Bake 25 minutes more, or until hot and bubbly.

Italian Sausage Soup – Thaw in fridge overnight.
This is a basic heat and eat supper. Serve with a crusty style bread.

SIDES

Thaw all sides except for Sweet Potato Fries in fridge.

Serve pastas hot or cold add some cheese and you have another meal. Thaw coleslaw in fridge.

Heat rice in micro wave to desired temperature. Rice can be heated from frozen in microwave.

Sweet Potato Fries:
Preheat oven to 400 place frozen fries on a baking sheet covered with parchment paper and bake for approx 10 minutes turn and continue for another 10 minutes or until desired crispness is achieved.
