Cooking Instructions - October 2006 Menu

COOKING INSTRUCTIONS

When thawing freezer bags be sure to place them in a bowl or baking dish in the fridge in case of leakage. If you forget to thaw you can thaw in the microwave or increase the cooking time by about 25minutes for the foil pans.

Calzones – Thaw in fridge overnight or increase the cooking time by approx: 10 minutes. Bake in a 350 degree oven for 13 to 15 minutes until golden brown. Serve with a tossed salad. Double the time if cooking from frozen. Serve with a salad of your choice.

Strip Loins with Gin and Juniper Sauce -
Thaw in fridge overnight. Heat a medium-sized cast-iron or heavy skillet over high heat until nearly smoking. Place steaks in the heated pan and cook for 2 to 3 minutes per side, or until browned on the outside but still pink inside. Transfer steaks to a plate and keep warm. Reduce the heat under the skillet to medium and add the reserved stock mixture to the pan. Cook, stirring to scrape up any brown bits on the bottom of the pan, until reduced slightly, 1 to 2 minutes. Place the steaks on individual plates and spoon the sauce over. Serve with seasonal vegetables and potato wedges.

Blueberry Pecan Glazed Chicken
–  Thaw in fridge overnight. Preheat barbecue on medium heat. Grill chicken breasts, bone side down, for about 14 minutes. Turn chicken and continue grilling until a meat thermometer inserted into the chicken reads 170°F (about 10 to 14 minutes). or until juices run clear.   Place sauce in a small sauce pan and bring to a boil then reduce heat and simmer until sauce is slightly thickened. Spoon sauce over chicken breasts and serve immediately. Serve with baby carrots and Parmesan roasted potatoes.

Moussaka
- Thaw in fridge overnight. Bake in a moderate oven for 1 hour. Let stand 10 minutes before cutting into squares to serve. Serve with a Greek Salad and roll.

Tuscan Chicken
- Thaw in fridge overnight. In a large skillet or pot with a lid pour all ingredients. Cover the pan and simmer 45 minutes or until the chicken is fully cooked. Serve with pasta or garlic toast.

Chicken with Turnips and Dried Cherries -
Thaw in fridge overnight. Bring the sauce mixture to a simmer, add the chicken, and cherries, partially cover and simmer until the chicken is cooked through but still tender, about 6 minutes. Check the seasoning, adding additional salt and pepper, as necessary. Transfer the chicken to a warm platter, spoon over the sauce and sprinkle with the chopped parsley. Serve piping hot with buttered noodles and peas.

Teriyaki Salmon –
Thaw in fridge overnight. Prepare grill.  Remove the salmon from the marinade, reserving the marinade.  Place reserved marinade into a pot and bring to boil.  Turn down heat and simmer until slightly thickened. Place the fish on an oiled grill rack. Position the fish 5 to 6 inches from the heat source, turning once and brushing with the reserved marinade several times, until the flesh is just opaque, 3 to 5 minutes per side, depending on thickness. Serve the salmon at once with reserved marinade as dipping sauce. Serve over steamed Jasmine rice provided and a few stir fried veggies also provided in your side dishes.

Asian Grilled Pork With Pineapple Skewers - 
Thaw in fridge overnight. Preheat grill to medium-hot. When ready to grill, remove pork from marinade and place on grill. Cook, covered, for about 2 minutes per side or until the internal temperature of pork is 160 degrees F. Meanwhile, place the pineapple skewers;  on grill turn after 2 minutes at the same time as the pork. Serve with vermicelli or rice.

Almond Pork loin Skillet –
  Thaw in fridge overnight. Remove pork from marinade, reserving marinade; pat dry. Coat pork with almonds. Heat oil in large skillet over medium heat. Brown pork on all sides, about 5 minutes, turning carefully. Reduce heat to low, add reserved marinade, onion, carrot and celery; cover and simmer 10-12 minutes. Serve with vegetables and hot cooked rice. Garnish with chopped cilantro and accompany with a fruit salad.

Smoked Salmon Frittata -
Thaw in fridge overnight. Preheat the oven to 350 degrees F (175 degrees C).  Heat olive oil in an 8 inch oven-safe skillet over medium heat. Empty contents of the bag and cook over medium heat without stirring, until the edges appear firm. Place the skillet in the preheated oven, and bake for 20 minutes, or until nicely browned and puffed. Flip onto a serving plate, and cut into wedges to serve. Top with fresh avocado slices if desired.

Blue Cheese Baked Penne -
Thaw in fridge overnight. Preheat oven to 350F.  Bake until bubbly approx: 30 minutes. Serve with Fresh fruit salad.

Black Bean and Pumpkin Soup – 
Thaw in fridge overnight. Slowly warm thawed soup on the stove until heated thru. Serve with a crusty roll.

SIDES

Thaw all sides except for Sweet Potato Fries in fridge.

Serve pastas hot or cold add some cheese and you have another meal. Thaw coleslaw in fridge.

Heat rice in micro wave to desired temperature. Rice can be heated from frozen in microwave.

Sweet Potato Fries:
Preheat oven to 400. Place frozen fries on a baking sheet covered with parchment paper and bake for approx 10 minutes turn and continue for another 10 minutes or until desired crispness is achieved.
