Cooking Instructions - January 2007 MenuWhen thawing freezer bags be sure to place them in a bowl or baking
dish in the fridge in case of leakage. If you forget to thaw you can
thaw in the microwave or increase the cooking time by about 25minutes
for the foil pans. If bag contains sauce mixture rinse with a little
water to get everything out. Pasta Putanesca - Thaw in fridge overnight. Gently heat in a sauce pan or microwave until heated thru. Chicken Enchiladas - Thaw over night in fridge. Place
covered foil pan in pre-heated 375 degree oven and cook covered for 30
minutes then
uncovered for 15 more minutes until topping is golden and hot. Stuffed baked Loin Chops – Thaw in fridge overnight. Place chops in a buttered shallow baking pan with 2T water, cover with foil and bake in a preheated 350 oven for about 30 minutes. Uncover and add 2T water if needed and bake for 15 to 20 more minutes until chops are cooked thru. Cashew Butter Chicken - Thaw in fridge overnight Oven: Sauté curry mixture in a large frying pan for about 2 minutes or until fragrant. Add chicken and cook, stirring for 5 minutes or until chicken is brown. Add cashew and cream mixture and simmer, stirring occasionally, for approx 40 minutes or until chicken is tender. Blueberry Maple Breakfast Bake - Thaw overnight. Pour mixture into appropriate size casserole dish. Cook in 350° preheated oven for 30-45 minutes until a knife inserted in the center comes out clean. Cover with foil if edges brown too much. To serve cut into squares and serve with additional maple syrup and fruit salad if desired. Boneless pork loins in a rich white wine mustard sauce - Thaw in fridge. Cook coated chops in a non stick skillet about 4 minutes per side until cooked but not dried out. Remove from pan and keep warm (cover with tented foil). Pour sauce mixture into same pan and bring to a boil, stirring constantly until sauce is thickened. Stir in any juices accumulated from pork loins; spoon sauce over chops. Serve with rice or noodles. Baked Salmon Fillets with feta cheese and Coriander - Thaw in refrigerator over night. Preheat oven to 475°. Place salmon in a single layer skin side down on a greased pan. Pour the tomato sauce around fish. Brush the top of the fish with a little oil and sprinkle with cheese and bake for 5 minutes. Sprinkle with fennel. Switch to broiler and broil for 5 minutes. Do not overcook. Sprinkle with coriander and serve immediately with a simple salad and a roll. Golden Lentil Soup with Chicken Meatballs - Pour bag with lentil into pot, bring to a boil then reduce to a simmer and simmer for about 30 minutes until lentils are tender. Using an immersion blender blend about two thirds of the pot. If you don't have a blender simply mash some of the mixture in the pot with a potato masher. Heat meatballs in the oven or microwave Just until heated thru. Divide meatballs into bowls and cover with hot soup. Garnish if you like with a dollop of plain yoghurt, chopped mint and lemon zest. Serve with a crusty roll. Fruity Beef Curry Casserole - Thaw in fridge overnight. Bake casserole in preheated 350 degree oven for 45 minutes until cooked thru. Serve with rice or mashed potato. Crazy Craisin Legs - Thaw in fridge. Preheat oven to 375. Place chicken and sauce in a baking dish bake for 50 minutes or until juices run clear when pierced. Serve with pan drippings and roasted potatoes and veggies on the side. Beef and Bean Stir Fry – Thaw in fridge overnight. Place beef mixture into a hot oiled wok and stir fry until beef changes color. Add bean mixture and stir-fry for 2 minutes or until beans change color. Stir in fresh coriander if desired and serve over rice. SIDES Serve pastas hot or cold add some cheese and you have another meal.
Thaw coleslaw in fridge.
