Cooking Instructions - February 2009 Menu

When thawing freezer bags be sure to place them in a bowl or baking dish in the fridge in case of leakage. If you forget to thaw you can thaw in the microwave or increase the cooking time by about 25 minutes for the foil pans. If bag contains sauce mixture rinse with a little water to get everything out. Some meals will take up to 2 days to completely thaw.

Pesto Linguine with Pancetta and Feta – Thaw in fridge. Bake in a preheated oven at 350°F for 1 hour or until heated thru.

Salmon with Spicy Straw Salad Thaw in refrigerator over night. Grill:  Preheat grill. Over low to medium heat, Brush with oil season with salt and pepper grill salmon for 2 minutes on one side, brushing once or twice with oil. Flip and grill for 2 minutes or until meat flakes easily with a fork. Oven: Preheat oven to 450°. Place salmon in single layer in greased pan. Drizzle with oil season with salt and pepper and bake for 5 minutes or until meat flakes easily with a fork.  Serve with spicy straw salad.

Mahi-Mahi with peaches and Mangoes - Thaw in refrigerator over night. Season both sides with salt and pepper. In a hot well oiled pan fry fillets skin side down in a hot pan for about 2 minutes until skin is a bit crispy. Flip fish gently and finish cooking another couple minutes until fish is flaky. Serve with peaches and mangoes. If you want to bake or grill your fish do so.

Empanadas Thaw in fridge overnight or increase the cooking time by approx: 10 minutes. Bake in a 350°f oven for 13 to 15 minutes until golden brown. Double the time if cooking from frozen. Serve with a salad of your choice. Try our Rhubarb ketchup with these, YUM!

Pork Loin Chops with Chipotle Bean Salad – Thaw in fridge. Heat a pan (a grill pan or regular skillet) over medium-high heat. Add a bit of olive oil. Remove pork from bag season with salt and pepper and fry on each side for a few minutes. Pour salad in pan to heat add some liquid if it is to dry chicken stock, tomato juice or water would do. Serve over rice.

Beef and Barley Soup – Thaw in fridge. Heat gently in a  pot add some water or stock if desired.

Asparagus Quiche – Thaw egg mixture bag in fridge, in a bowl, overnight. Leave pie shell frozen until ready to use. Preheat oven to 375°. Remove pie shell from freezer bag. Gently pour egg mixture in pie shell. Place in oven and bake 35-40 minutes until middle is set and top is golden. If pie shell edges are beginning to get too brown, cover gently with strips of foil. Remove from oven and let stand 5 minutes before serving. Serve with a leafy salad and buttered toast triangles.Shepherds Pie – Thaw in the fridge. Preheat oven to 400°f. Place pan uncovered on a cookie sheet and bake until potatoes have browned and filling is warmed thru

Ginger Pork Fajitas – Thaw in fridge overnight. Warm in the oven or microwave. Serve with salsa and sour cream if desired.

Chicken with Pineapple Salsa – Thaw in fridge Preheat. In a well oiled frying pan cook chicken evenly on both sides until no longer pink on the inside. Serve with Pineapple salsa.

Chili with cheese - Thaw in fridge overnight. Warm in the oven or microwave. Serve tortilla chips and a green salad.

Blackened Tilapia – Thaw in fridge overnight. Rinse fish under cold water and pat dry with a paper towel. Generously coat with blacken spice. Pan fry in a hot pan with oil until fish is flaky.
