Cooking Instructions - March 2009 Menu

When thawing freezer bags be sure to place them in a bowl or baking dish in the fridge in case of leakage. If you forget to thaw you can thaw in the microwave or increase the cooking time by about 25 minutes for the foil pans. If bag contains sauce mixture rinse with a little water to get everything out. Some meals will take up to 2 days to completely thaw.

Sun dried Tomato Procuitto Alfredo with spinach and Cheese  – Thaw in fridge overnight. Warm in the oven or microwave. Serve with a green salad.

Salmon Tango – Thaw in refrigerator over night. Reserve a small amount o marinade to use as a basting sauce; the remainder is used as a marinade. Place salmon fillets in a large resealable plastic bag. Pour in marinade, seal, and turn to coat salmon. Refrigerate at least 1 hour, turning once.

Preheat grill for medium-high heat. Lightly oil grill grate. Place salmon on grill, and discard marinade. Cook salmon for 3 to 4 minutes per side, or until easily flaked with a fork. Baste with reserved sauce while grilling.

Mahi-Mahi Tiki Tiki - Thaw in refrigerator over night. Heat oven to 425 degrees.

Arrange enough pineapple to fill the bottom of a lightly oiled baking pan that's just big enough to hold the fish. Brush the fillets with oil; season with additional salt and pepper if desired. Place fillets on top of the pineapple. Pour the pineapple-mint sauce over the fish; bake just until fish flakes easily, 10-13 minutes.

Place pineapple , fish and any remaining sauce over rice; sprinkle fresh mint on top. Serve with rice.

Empanadas Thaw in fridge overnight or increase the cooking time by approx: 10 minutes. Bake in a 350°f oven for 13 to 15 minutes until golden brown. Double the time if cooking from frozen. Serve with a salad of your choice. Try our Rhubarb ketchup with these, YUM!

Spicy Pork Loin Chops with Mexican Bean Salad – Thaw in fridge overnight. Warm in the oven or microwave.

Beef and Bbroccoli Soup – Thaw in fridge. Heat gently in a  pot add some water or stock if desired.

Irving Farms Zinger Sausage and Cheese Strata – Thaw in fridge overnight, Preheat oven to 375°F. Bake strata uncovered until puffed and golden brown, about 45 minutes. Transfer pan to rack and cool 5 minutes. Sprinkle with parsley.

Pork Cottage Pie – Thaw in the fridge. Preheat oven to 400°f. Place pan uncovered on a cookie sheet and bake until pastry is browned and filling is warmed thru

Turkey Cacciatore – Thaw in fridge overnight. Warm in the oven or microwave. Serve with over pasta, potatoes or rice.

Chicken and Bean Quesadilla – Thaw in fridge. Pan fry or heat in the oven.

Thai Chicken - Thaw in fridge overnight. Preheat oven to 375°. Place chicken in a shallow pan or baking dish with sauce. Bake uncovered for 45 to 50 minutes or until golden brown and juices run clear when poked with knife.  Sprinkle with additional green onion if desired and coriander or parsley.  Serve with rice, noodles or one of our rice side dishes.

Sweet and Tangy Broiled Tilapia – Thaw in fridge overnight. Place the tilapia on the prepared baking sheet, and broil about 3 minutes in the preheated oven. Turn tilapia, and drizzle with about half the lemon juice dressing mixture. Continue broiling about 3 minutes, turn, and drizzle with remaining dressing. Continue broiling about 2 minutes, or until fish is easily flaked with a fork. Remove from heat, and sprinkle with remaining lemon juice to serve.
